Growing methods – double guyot pruning, “four days” working methods, cereal sowings between rows, organic compost, disbudding, green harvesting, fleshing.
Vinification – Harvesting by plot – selective sorting – destemming – non-pressed. Vinification in temperature-regulated stainless steel vats.
Ageing – 18 months in French oak barrels of 225 litres (30% new)
